This is the best glazed black pepper bacon ever, and it is so easy to make! I was raised always frying bacon on the stovetop, and now I wonder why I didn’t start baking it a long time ago! A touch of brown sugar adds a sweet crisp glaze, and goes well with the fresh cracked black pepper. Try it on a tasty BLT with our Easy Garlic Aioli! You are going to love it!
Tools for Best Glazed Black Pepper Bacon:
Sheet Pan: I suggest using a good quality sheet pan that will not bend and twist in the oven. You don’t want bacon grease to ooze off the pan onto the floor of your oven. I have found that I really like half-sheet sized aluminum pans, and this is a well-used favorite! Be sure not to use a flat cookie sheet! You need the walls on the sheet pan to retain the bacon grease.
Baking Grid: I make this recipe using a baking grid on the sheet pan. This creates more even cooking and allows the grease to drip on to the bottom of the pan underneath the bacon. You can also cook directly on the sheet pan. If you cook directly on the pan, your bacon may cook quicker, so be sure to watch it!
Parchment Paper: I like to line the sheet pan with parchment paper for easier cleanup. If you are not using a baking grid, you can put your bacon directly on top of the parchment paper. The pre-cut sheets are very handy for quickly and easily getting just the right size for your pan.
Ingredients:
Thick Cut Bacon: I personally prefer to use thick cut bacon. If you use thinner slices they may cook a bit quicker, so be sure to watch for that.
Brown Sugar: This is also your preference. You can use either light or dark brown sugar.
Fresh Cracked Black Pepper: I like to crack the black peppercorns directly onto the bacon for a fresher flavor. We use our pepper grinder all the time. If you don’t have one, you can also purchase peppercorns in a pre-filled grinder. You can also use store-bought cracked black pepper if you don’t want to crack your own.

Ingredients
8 Slices of Thick Sliced Bacon
Fresh-Cracked Black Pepper, to taste
Brown Sugar, Light or Dark, to taste
Directions
- Heat oven to 400 degrees F.
- Line half-sheet sized sheet pan with parchment paper and place baking grid on top.
- Place bacon on the grid leaving a small amount of room between slices.
- Sprinkle with your desired amount of fresh cracked black pepper.
- Sprinkle lightly with brown sugar. See photo below.
- Bake for 20-25 minutes, or until bacon reaches desired crispiness. Take care when removing bacon from the oven so as not to spill any grease.
Notes
- If you choose not to use a baking grid, you can cook directly on the sheet pan. If you cook directly on the pan, your bacon may cook quicker, so be sure to watch it!
- The bacon may also cook quicker if you use thinner slices, so be sure to watch for that as well.
- Add as much or as little of the brown sugar and black pepper as you like.
- Take care when removing sheet pan from the oven. Bacon grease will be very hot.
- This recipe works best with a half-sheet sized sheet pan.
