Mango Papaya Salsa

Surprises. How often do you experience surprise? What emotions does surprise evoke in you? What thoughts? Depending on the type of surprise, the emotions and thoughts may vary significantly. Is it a wanted surprise? Unwanted? How do you respond physically to surprise? Have you paused to consider your reactions to surprises in your life, or do you just follow along where ever the surprise leads you?

For the most part, I enjoy finding surprises hidden in my every day life. Sometimes they teach me, and sometimes they reward me. Sometimes they bring joy and sometimes pain. Whatever the universe brings, I like to move with the flow of it. That being said… sometimes I swim upstream for miles before deciding to go with that flow of the surprises. This one, however, I have enjoyed since day one. I remember first trying this fruity salsa… salsa was supposed to be made from tomatoes, peppers, onion and garlic! Why would I put a mango and a papaya in a salsa? Well as it turns out, this was a fabulous surprise! ENJOY!

*Play with the ingredients! Add more or less of any of the items to make this recipe your own. To add more spice, try serrano or habanero peppers!
*Enjoy with your favorite chips, or use a fork!

Mango Papaya Salsa

The beauty of this recipe is the simplicity. Simple, fresh ingredients combined into a tasty Caribbean-inspired salsa.

Ingredients

  • 1 mango, peeled and chopped

  • 1/2 papaya, peeled and chopped

  • 1/2 cup red onion, diced

  • 1 – 2 jalapeno peppers, diced

  • 1/4 cup lime juice, fresh squeezed

  • 2 Tbsp cilantro, chopped

Directions

  • Combine mango, papaya, onion, jalapenos, and cilantro in bowl. Stir.
  • Add lime juice. Stir to mix flavors.
  • Refrigerate until ready top use. ENJOY!
