Roasted Basil Green Beans

These green beans are simple and delicious. A perfect side dish when you want a fresh easy vegetable. It is one of the best green bean dishes I have had, and it complements so many main courses! This is my version of a green bean recipe I read online several months ago and adjusted to my taste and style.

Some days we hope for simplicity. For ease. We want to relax while enjoying the moment. We want a flavorful existence with a manageable stress level. We want to be healthy. This dish is perfect for those days.

My favorite tips:

*The beauty of this recipe is the easy preparation that results in such delicious flavor!
*The quantity can be easily adjusted to prepare a side for more people.
*I use just enough olive oil to coat the beans when tossed with the seasonings.
*The salt, black pepper, and dried basil can be adjusted to taste. I like to use a light sprinkle of salt and pepper, and a heavier sprinkle of dried basil.
*It is also easy to adjust the shredded Parmesan and fresh basil to taste. These add great depth and flavor to the dish.
*This goes well with so many dishes! Try it with Tomato Basil Cod, Steak au Poivre, or delicious Coq au Vin!

*A good baking sheet can truly improve your baking experience! You want something that will not bend and warp in the oven. I have used various pans over the years, and this aluminum half sheet by Nordic Ware is my favorite! 

Roasted Basil Green Beans

Ingredients

  • 1 lb fresh green beans

  • 1-2 tbsp olive oil

  • dried basil, to taste

  • sea salt, to taste

  • black pepper, to taste

  • 1/4 cup Parmesan cheese, shredded

  • 1/4 cup fresh basil leaves, roughly chopped

Directions

  • Preheat oven to 375 degrees F.
  • Prepare green beans by snapping off the ends and rinsing thoroughly. Pat dry to remove as much excess water as possible.
  • Place green beans in one layer on baking sheet. Drizzle with olive oil.
  • Sprinkle salt, pepper, and dried basil over the green beans. Using your hands, toss the green beans with the oil and seasonings.
  • Bake until desired doneness, approximately 20-25 minutes, stirring once or twice while cooking.
  • Remove from oven and sprinkle immediately with shredded Parmesan and fresh basil.
  • Serve immediately and enjoy!
