There are days when we crave comfort. Our human selves can become tired. Physically, emotionally, mentally, cognitively, spiritually. That intrinsic need for personal care jumps into motion, reminding us that we must find those everyday comforts amidst the chaos.
Why not try a comfortably delicious taco! Quick. Easy. Healthy. Comfort with a little bit of spice. Turn on your favorite music, sing out loud, and dance around that kitchen while you make these tasty treats! Fabulous healthy food, a bit of exercise, good music… a recipe for self care.
My favorite tips:
*The beauty of this recipe is the combination of ease and flexibility. Customize to your taste and enjoy!
*I use Savory Spice’s Peruvian Chile Lime Seasoning. It is my absolute favorite chicken taco spice, always fresh and much quicker than mixing your own.
*If you prefer to mix your own spices, I suggest a combo of cumin, chili powder, oregano, annatto, and turmeric.
*I use different toppings depending on what I’m in the mood for.
*I use plain non-fat Greek yogurt to make it a bit healthier, however you can substitute sour cream or Mexican crema.
*BE SURE TO COOK YOUR CHICKEN THOROUGHLY! The FDA recommends cooking chicken to an internal temperature of 165 degrees F.
