Hurry. Rush. Quick. Get it done. Running late. Deadline. Overdue. Faster. Just typing these words seems to raise my heart rate. Pause. Breathe. We are only human. We can do as much as we can do. Society often creates a sense of urgency… a sense that we must work ourselves to the point of exhaustion in order to advance. We can get too caught up in this crazy race.
I remember a time that I worked through my lunches, maybe eating a snack in the car or at my desk, just to keep up with the extensive social work case load the agency expected me to carry. This is not unusual in helping professions… and it is so unhealthy. Time is precious. Life is precious.
Take time for yourself. Take time to breathe. Take time to slow down and be in the mindful moment. Slow cooker recipes can help save this precious time, providing you with extra moments for yourself! A short prep time in the morning and then a few minutes in the evening to finish things up. This Chicken Marsala is so easy and delicious. Enjoy!

My favorite tips:
*The beauty of this dish is the ease of preparation. Such a tasty meal with a few simple ingredients.
*I use canola oil spray in this recipe. You can substitute with your favorite cooking spray.
*I love this recipe with the Baby Bella mushrooms. You can also use white button mushrooms if you prefer.
*This recipe goes well with easy sides, such as cauliflower rice, broccoli, or my favorite Roasted Basil Green Beans.
*Safety note! Do not eat under-cooked chicken!
