I talk to people who describe being addicted to becoming healthy, and others who have no desire to even discuss the word or concept. Sometimes we don’t even think about what healthy means. Ponder the question… What does “healthy” mean to you?

Healthy is not a bad word. It is not unattainable. It is not flavorless and plain. It is not bland. And people, this is coming from someone raised in an East Texas home where we ate home-grown vegetables and deep fried just about anything in bacon grease. I love my roots… and I’ve adapted. I’ve grown. I still love that fried okra from time to time, and I love the lighter fresh flavors, too. Balance! Here is a tasty fresh recipe for Tomato Basil Cod. Use those fresh home-grown cherry tomatoes and basil to create a light delicious sauce for this tasty fish. ENJOY!

Tomato Basil Cod

The beauty of this recipe is the ease of making such a flavorful healthy dish! Simple, easy, delicious!

Ingredients

  • 4 cod filets

  • 2 Tbsp olive oil, separated into 1 Tbsp portions

  • 4 cloves garlic, minced

  • 1/2 tsp red pepper flakes

  • 1 pint cherry tomatoes, sliced in half

  • 1/2 cup white wine

  • 1/2 cup fresh basil, finely chopped

  • 2 Tbsp fresh lemon juice

  • 1/2 tsp lemon zest

  • 1/2 tsp sea salt, more or less to taste

  • 1/4 tsp black pepper, fresh ground, more or less to taste

  • OPTIONAL GARNISH – fresh lemon wedges

  • OPTIONAL GARNISH – fresh basil leaves

  • OPTIONAL GARNISH – red pepper flakes

Directions

  • Pre-heat oven to 375 degrees F.
  • Add 1 Tbsp olive oil to skillet on medium heat. Add garlic and red pepper flakes. Stir continually. Saute until fragrant, about 1 minute.
  • Add cherry tomatoes. Stir occasionally until blistered and holding their shape, about 9-12 minutes.
  • Add white wine. Stir and bring to a simmer.
  • Add basil, lemon juice, lemon zest, salt, and black pepper. Stir. Cook until warmed through, approximately 2 minutes. Remove from heat and set aside.
  • In oven-safe skillet, heat 1 Tbsp olive oil on medium heat. Add cod to hot skillet. Cook 5 minutes til golden brown. Flip cod and place in oven for approximately 5 minutes until fish is cooked through.
  • Remove from oven. Pour sauce over cod in hot skillet. Serve warm with lemon wedges, basil, and red pepper flakes, as desired. ENJOY!
