This Magic Chicken and Broccoli recipe came to me as part of a creative challenge. I enjoy challenges. I grow through them. This one asked for a meal using a protein, nuts, Asiago cheese, and broccoli. Here is a fantastically easy and delicious recipe! The one-skillet meal is simmered in a bath of white wine and garlic for amazing flavor! ENJOY!
The recipe works best with a large 12 inch skillet. A good skillet will elevate your cooking experience! I’ve made this with both my nonstick Le Creuset pans and HexClad pans. The Le Creuset is a good quality nonstick pan that has held up wonderfully to all of my cooking challenges. And, I love the HexClad pans so much; they are stainless steel, non-stick and very durable! Both are durable and easy to clean.

Ingredients
1 tbsp olive oil
1 lb chicken breast tenders
1 tbsp minced garlic
1 cup white wine, like Chardonnay
4-5 cups broccoli florets, fresh
1 tbsp butter, OPTIONAL, see Notes
1/4 cup slivered almonds
juice of 1/2 lemon
Asiago cheese, freshly shredded
Garnish with lemon wedges, optional
Garnish with red pepper flakes, optional
Salt and pepper to taste
Directions
- Heat olive oil in skilled on medium-high. Add chicken tenders, turning once and cooking through.
- Remove chicken from pan. Turn down to medium heat. In same pan, add garlic until fragrant. This is QUICK! Add white wine, bring to simmer and continue to simmer about 2-3 minutes.
- Add broccoli and stir to coat in sauce. Cook to desired doneness, stirring frequently. Add optional butter if desired. Stir and let melt.
- Return chicken to the pan and mix with the broccoli. Remove from heat. Stir in almonds and lemon juice.
- Serve warm sprinkled with Asiago and your favorite garnishes.
Notes
- This recipe goes well with rice or riced cauliflower.
- I use Chardonnay. Try your favorite white wine.
- Butter is optional. It adds a bit of richness, but the recipe is also delicious without it.
