Grateful for a place to sleep. Grateful for a pet or friend. Grateful for food to eat.

*The beauty of this recipe is that it is so quick, easy, and flavorful!
*You can substitute with your favorite stir fry veggies.
*I use 2 natural free-range chicken breasts, which is about 1 pound of meat. Trim any fat and slice into strips, approximately 1/2 inch by 1/2 inch and 2-4 inches long.
*For the Vietnamese Sweet Lemon Curry seasoning, I use Savory Spice. So fresh and delicious! You can use your other favorite lemon curry seasoning, as well.
*I use olive oil, but you can use your favorite for this recipe.
*The chicken will splatter when stir frying! Use a screen if you have one. This helps with cleanup after cooking.
*You can find Sambal Oelek chili paste at your local grocery store or on Amazon.
*Rice is a perfect companion to this stir fry! I prefer to use riced cauliflower these days. I love to buy it already riced and frozen.
*I choose to garnish with lime and use lime juice in the recipe. You may want to try lemon instead.
Lemon Curry Chicken Stir Fry

Ingredients
2 boneless skinless chicken breasts, sliced into strips
3 Tbsp olive oil, divided into 1 Tbsp portions
3 Tbsp lime juice, fresh squeezed, divided into 2 Tbsp + 1 Tbsp portions
1 bell pepper, any color, sliced
1 Anaheim pepper, sliced
2 cups broccoli florets
8-12 ounces mushrooms, sliced
1/4 white onion, sliced thin
1 tsp lemongrass paste
1 tsp fresh garlic, minced
1 tsp fresh ginger, minced
Optional Garnish – lime wedges
Optional Garnish – cilantro, fresh chopped
Optional Garnish – chili paste, like Sambal Oelek
Suggested side – Riced Cauliflower
Directions
- Combine Vietnamese Sweet Lemon Curry seasoning with 1 Tbsp olive oil and 2 Tbsp lime juice. Pour over chicken strips and marinate in refrigerator for 1 hour to overnight.
- Heat 1 Tbsp olive oil in wok or large skillet on medium-high heat. Add chicken strips, stirring frequently, until chicken is cooked through. Remove from pan.
- In same pan, add remaining Tbsp olive oil. Add lemongrass, garlic, and ginger. Stir continually until fragrant. This will be QUICK!
- Add peppers and onions. Stir continually until they start to soften, approximately 2 minutes.
- Add broccoli and mushrooms. Stir continually until mushrooms start to soften, approximately 4 minutes.
- Add chicken back to pan and stir. Remove from heat and add remaining Tbsp lime juice. Serve garnished with cilantro, lime wedges, and chili paste. I suggest serving with riced cauliflower! ENJOY!
