Simple. Sometimes I just want a bit of simplicity in my life. Simplicity is different for everyone. What does it look like in your life? Perhaps it is an hour spent in the garden. An evening walk. A drive in the mountains. Feet in the sand by the ocean. Maybe it means living with fewer material items. A tiny house. Xeriscape landscaping. Or, maybe it means an easy dinner.
Life can be complicated in my world. I look forward to my hobbies and passions, but some days there is just not enough time to get everything accomplished. On those days, I like simple recipes and easy dinners. This recipe is a SUPER EASY side dish. You could also make it a main dish if you prefer! It is Cuban-inspired and goes well with cuisine from many different cultures. ENJOY!

*The beauty of this recipe is that it is so simple, delicious, and healthy. Ready in minutes!
*I use non-stick cookware with no added oil. If you use cookware that is not non-stick, you may want to add a couple teaspoons of olive oil at the beginning.
*You can use frozen or fresh riced cauliflower. Frozen is so handy. I always have it in the freezer.
*If you don’t like cauliflower rice, you can absolutely substitute with your favorite cooked rice.
*This can be a main dish if you want a simple quick dinner!
*This dish goes well with Cuban, Caribbean, Mexican, and Latin dishes… and so much more!

Cilantro-Lime Black Beans and Cauliflower Rice

Ingredients
1 10-12 oz bag riced cauliflower, frozen or fresh
1 15 oz can black beans, rinsed and drained
1/4 tsp dried oregano
1/4 tsp fresh ground black pepper
1/3 cup fresh cilantro leaves, chopped
1/4 cup lime juice, fresh squeezed
Directions
- Add cauliflower rice to skillet and heat on medium-low until warmed through.
- Stir in black beans, oregano, and black pepper. Stir frequently. Cook until hot throughout.
- Remove from heat. Stir in cilantro and lime juice just before serving. ENJOY!
